Zucchini relish - really, it is great.
Zucchini pickles - this recipe is from my sweet friend Becki. I made it, I ate it. Even my picky boy liked it. And, this is of utmost importance, it looks very pretty in the jar.
Minted Zucchini Salad - I made this with dinner tonight. I was looking for something that I didn't have to heat up, something cold for a hot day. They all like it, surprise, surprise! My dear daughter says to double the mint. :)
1/4 cup olive oil
2 T lemon juice
1 T minced fresh mint
1/4 t salt
Dash cayenne pepper
1 and a half pounds zucchini, thinly sliced
In large bowl, whisk the oil, lemon juice, mint, salt and cayenne until blended. Add zucchini; toss to coat. Refrigerate until serving. Yield: 6 servings

Have you tried zucchini jelly? You use strawberry or apricot jello and that's the flavor it takes on. Do you use it as a filler in lasagna and other meat dishes?

I don't make lasagna often but I was just thinking that I should.... I'll try it!

And I make zucchini patties, like latkes, all the time- and I might have even learned that in college.... ;-)
And I often just slice it thin, drizzle with olive oil and sprinkle with salt and pepper, a tiny bit of cheese, italian spices, and broil.

Yes, you can make jam with it! Last year we canned "Mock Strawberry Jam" by using shredded zukes & strawberry jello.

Oh, I forgot about another one I made up: Italian Zucchini Casserole
Sprinkle 1 cup of uncooked brown rice on the bottom of 9x13 dish. Place sliced zucchini on top, cover with browned ground beef, chopped onions, italian seasoning, salt & pepper. Pour a can of tomato sauce on top, sprinkle with shredded cheese and bread crumbs or potato chip crumbs. Bake @ 350 for about 45 minutes or until rice is done.

We grew zucchini in our garden this year and got a pretty good harvest. I just finished making zucchini cake. This is unbelievably good( though not exactly a "healthy" recipe). Even family members that think our organic food is weird LOVE this cake. You should definitley try it. I'll post the recipe on my blog and also the one for Challot that I told Serenity I would.

I would love to take some zucchini off your hands. If only you weren't so far away! We were just talking tonight about zucchini bread. This is the first year in awhile I didn't plant anything and the zucchini is one thing I'm able to grow. LOL
