Afternoon Snack, Fresh Thoughts Style


At our house today, it's just not quite as warm as it should be for this time of year. The skies are threatening rain and we'll be inside for the afternoon. While the little ones have been taking their afternoon snooze, I made these cookies for their afternoon snack. You should try them, they're really good. They are a little spicy but not so much so that the little ones won't be able to eat them, think ginger snap without the snap.

Soft Ginger Cookies
1 1/2 cups butter
2 cups sugar
2 eggs
1/2 cup molasses
5 cups flour
4 teaspoons ground ginger
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon ground cloves
1/2 teaspoon salt
additional sugar

Cream butter and sugar, beat in eggs and molasses. Combine flour and all spices and gradually add to the butter mixture. Roll into balls and roll in sugar. Bake at 350 for 9-10 minutes.

I LOVE Ginger cookies! I guess great minds think alike - I made my other favorite today (chocolate chip)because I also made butter and, well...if I already have softened butter I might as well make cookies, right? I am posting my recipe and storage technique on tomorrow's blog.

I love ginger cookies too. I have a great recipe (mine is called Molasses cookies) but it doesn't make very many. Your recipe looks just like mine but doubled...although mine takes 2 eggs also. I think I'll try yours.

Regarding my paint color. I put it at the very end of my post. It's Behr paint in Bleached Denim.
