Lilac Muffins


Since my post about dandelion jelly (that turned out FABULOUSLY btw) I've been totally inspired to see what else I can do with all that grows on the little patch of grass that we call ours. As if on cue, Mama-Aya posted about lilacs. I had no idea that you eat those too! With a tiny bit of searching around I found this recipe. My kids will be eating these tomorrow!


Lilac Muffins

Makes: 2 dozen

Ingredients:
2 cups lilac buds and blossoms (no green part of flower)
3 eggs
1 cup oil
2 cups sugar
1 teaspoon vanilla
3 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder

Directions:
Rinse lilac buds in water and let them soak.
Beat eggs, mix in oil, sugar and vanilla.
Stir in flour, baking soda and baking powder.
Pour excess water off lilacs.
Stir into batter.
Pour in prepared muffin tray.
Bake at 325degrees for 30 to 40 minutes.
***Amendment to this post - I did end up making these. They are good but really different. More cookie like than muffin like but super tasty! They made two dozen.***

that sounds yummy! We'll have to wait till much later in the season here in Montana for our lilacs to bloom, but I'll keep the recipe!

That sounds so good. God has given us so many good plants to eat. Why do we usually eat only a fraction of what He has supplied?
