Ready for a good breakfast this morning? Here are the ingredients you'll need:
A couple of good helpers and:
For pancakes:
4 cups whole wheat flour
2 tsp. baking soda
4 tsp. baking powder
4 eggs
1 - 32 oz. carton of yogurt, plain or vanilla
2 cups water
For syrup:
6 cups blackberries
1 1/2 cup sugar
3 tsp. lemon juice
1/2 cup water
Combine dry pancake ingredients in a bowl (sorry for my less than perfect pictures. My camera never takes great ones in artificial light and it was still dark out... "She rises while it is still night and prepares food for her household..." Proverbs 31:15)
Mix wet pancake ingredients in a separate bowl with a whisk. Add the dry to the wet mixture. Drop on hot griddle by 1/4 to 1/2 cups.
While you are waiting, put all the syrup ingredients in to a pot and cook on medium, stirring constantly until sugar dissolves. Bring it to a boil and then reduce heat to a simmer, cooking for 8 minutes, stirring occasionally. Cook 2-3 minutes and mash the fruit against the sides of the pot. Cool slightly.

Jennifer - I don't know because they ate them as fast as they came off! Probably a lot more than you need, though because I did have enough left overs for everyone to have a couple tomorrow. I think you should consider halving it.

Have you ever tried freezing pancakes? Wondering if they thaw out well, or if they get all stuck together...
JL - You have to flash freeze them on a cookie sheet first and then put them in a gallon ziplock. I take them out the night before I want to use them and then toast in the toaster or in the oven in the morning.
Oh, I never have room in my freezer for flash freezing. But I like the idea of just pulling pancakes out and popping them in the toaster.
I just am not that into cooking first thing in the morning...Time to teach my boys how to cook more than french toast. LOL!
