I'm Not Too Far Gone To Make Cookies

Really, after all I said yesterday, some of you are wondering about me. Well, guess what? I still make cookies in December. I'm about to give you the best cookie exchange recipe in the world. And, if you are attending a cookie exchange with me in RL, don't even think of stealing it, because you know this is what I'll be bringing!!!!!!!

This recipe is defiantly an old favorite. I discovered these cookies the December I was pregnant with my first baby, I was working with a sweet and still good friend, Sharon Jackson, it is her mom that makes them every year. They were kind enough to share their recipe and now for the last sixteen (?!) years I have been making them. You'll end up with a lot using this recipe, so plan on taking them everywhere you go this season!

Chocolate Balls

1/2 lb. butter, melted
1/2 lb. graham crackers, crushed
1/2 cup peanut butter
2 cups angel flake coconut
1 cut nuts, chopped
1 box powdered sugar
1 tsp. vanilla

Mix in to balls the size of walnuts. Chill. (You and the dough.)

Melt two packages of butterscotch chips and 2 packages of chocolate chips, roll balls in melted chips mix and drop on foil to set.

These freeze well. *My own little tip, although a ball of chocolate is practically irresistible to most adults and children alike, these cookies look super cute if you add sprinkles before they dry*

Are you kidding me?! Those look delicious, but awfully dangerous. Might as well go shopping for some HUGE sweatpants BEFORE I get the ingredients, I can see now that I'll have to forsake my wardrobe for these cookies....

These look delicious. The melted butterscotch chips, I know, make them fabulous! I have a recipe that includes melted butterscotch and chocolate chips as the icing! Yummo! The only thing is that I don't care for coconut! However, I am still going to make these balls and try one! or 2, or 3!

They look yummy! Have you ever doubled the amount, approx how many does a batch make? I have to make 8 items for the 4-H bake auction friday, I am looking for quick & easy with a Lovely presentation....I also have to do all of this with a screaming baby that has roseola...maybe if i ate a few, i would feel better...

I've never doubled it, but if you decide to try that, just know that you may not get out of the kitchen in time for the auction on Friday! I'm not sure how much it makes but it's a lot. My little walnut sized balls get bigger and bigger as I go because I just want to be done making them by the end!
