Turkey Re-done

Tired of turkey? Yesterday I roasted two more turkey breasts as we were to attend another Thanksgiving gathering. She called last minute to cancel. The whole family is sick. Truth be told, I'd rather be stuck with left overs than have a bunch of sick kids.

So, needless to say, on my menu this week will be a little bit of turkey.

I'm planning to make my favorite white chili, subbing turkey for chicken, and today will be turkey salad sandwiches for lunch. The following recipe is a big time family favorite and if you know me in real life, you've had them, almost assuredly!

Colorful Turkey Croissants
2 cups cooked turkey breast
1/4 diced celery
1/4 raisins
1/4 dried cranberries
1/4 sliced almonds
3/4 cup mayo
2 T chopped red onion
1/4 teaspoon salt
1/4 pepper
4 croissants, split

In bowl, combine the first nine ingredients. Spoon about half cup in to each croissant. Yield: 4 servings

These are pretty and make a nice presentation.

We've been doing turkey all weekend in various forms and venues. Tonight, it's turkey soup :)

I have a similar recipe as yours. Except we add cream cheese to it and substitute unsalted seasoning, like Mrs. Dash for the seasonings you have. We really like these sandwiches.

I have had your chicken croissants and they are yummy! Hmmm...I'm going to have to make them soon.
